السلاطة تثبت يوماً بعد يوم أنها مليئة بالفوائد لجسم الإنسان لما تحتويه من فيتامينات .. ويساعد طبق السلاطة المكون من البصل و الطماطم و المقدونس و الجزر و الخيار و الجرجير و الخس و الشبت و الفلفل الأخضر .. على إنقاذ الوزن و انخفاض مستوي السكر بالدم‏ وكذلك تقليل امتصاص الملح في المعدة‏
أوضح خبراء التغذية انه عند تناول السلاطة الخضراء فى بداية الطعام تؤدى إلى امتلاء المعدة فيشعر الإنسان بالشبع فلا يندفع إلي أكل النشويات مما يعد وسيلة ناجحة ومفيدة لضبط الأوزان أو للحصول علي قوام رشيق‏,‏ وهذا يفيد أيضا مرضي السكر إذ أنه عند تناول السلاطة في بداية الوجبة الغذائية‏,‏ فإنها تساعد علي ملء المعدة بمواد لاتعطي سعرات حرارية كبيرة‏,‏ وتجعل المريض يستهلك كميات أقل من النشويات والدهون‏,‏ مما يسهم بطريقة غير مباشرة في انخفاض مستوي السكر بالدم‏.‏
